Fruity Popsicles For Summer Snacks
Jun 22, 2017Summer is here! And with it comes hot, thirsty days, kids at home needing entertainment and lots of snacks, barbecues and picnics. Keeping it simple, healthy and tasty is key! You could make these fruity popsicles for summer snacks and keep them in the freezer to pull out on a moment’s notice, and they’re fun for the kids to make too. Avoid sugary ice creams and opt for fruit popsicles instead – you can use lovely, fresh, organic fruit and throw in some essential oils for even more health-boosting properties.
Lemon-Blueberry Pops
Ingredients:
- 1 cup frozen blueberries
- 1/2 cup spinach
- 1 banana, peeled
- 1 apple, peeled, cored and sliced
- 1/4 cup orange or pineapple juice
- 3/4 cup coconut milk
- 1/4 cup plain Greek yoghurt
- 1 drop lemon essential oil
Blend all ingredients together like a smoothie. Pour into popsicle molds, and freeze for at least 3 hours.
Fresh and Chunky Peach Pops
- 3-4 medium ripe peaches, halved and pitted
- 1/4 cup orange juice
- Juice of 1 lemon
- 1/8 cup maple syrup, or a few drops stevia
- 1/4 teaspoon vanilla extract
- 1 drop lemon or orange essential oil
Coarsely chop peaches in a food processor or blender, set aside 1 cup. Add the rest of the ingredients to the blender, and blend until smooth. Mix in the coarsely chopped peaches, and pour into popsicle molds. Freeze for at least 3 hours or until solid.
I am a mango lover so I could see using mangos for that recipe instead of peaches – yum! You could really get quite creative with different fruits and essential oils to add different flavors.
